Ingredients
  

Ice cream base
  • 2 cup heavy cream Cold for best whipping.
  • 14 oz sweetened condensed milk Use the full can.
  • 1 tsp vanilla extract
  • 0.5 tsp almond extract
  • 0.25 tsp salt
  • 1 blue food coloring Add gradually until the color is vibrant electric blue.
Cookie mix-ins
  • 8 Oreo cookies Crush into bite-size pieces.
  • 8 chocolate chip cookies Crumb into small chunks.

Method
 

Whip the cream
  1. Whip the heavy cream using a stand mixer until stiff peaks form, about 5–8 minutes, and the mixture holds a peak when lifted.
  2. Whisk the sweetened condensed milk, vanilla extract, almond extract, a generous amount of blue food coloring, and salt together until smooth and vibrantly blue.
  3. Fold the condensed milk mixture into the whipped cream gently until just combined, keeping the texture light and avoiding deflating.
Add cookie pieces
  1. Fold in the crushed Oreo cookies and crumbled chocolate chip cookies so the blue base is speckled with cookie chunks throughout.
  2. Transfer the mixture to a 9x5 loaf pan and smooth the top, then freeze at least 6 hours or overnight until firm and scoopable.

Notes

Pro tip: add blue food coloring gradually until it looks electric-blue in the bowl, since it may look slightly muted after freezing. Store covered in the freezer for up to 2 weeks; for best texture, let it sit at room temperature 5 minutes before scooping. Freezing is recommended (no need to churn). For a dairy-light option, use a higher-fat lactose-free heavy cream and a lactose-free sweetened condensed milk substitute if available, then follow the same folding and freezing steps.
