Method
Sear the chicken
- Season the chicken breasts generously with salt, pepper, garlic powder, and dried thyme. Pat to help the spices cling.
- Heat the olive oil in a large skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden. Cook until the center reaches 165°F, then remove the chicken to a plate.
Build the mushroom wine sauce
- Melt the butter in the same pan over medium-high heat. Let it foam briefly.
- Add the sliced cremini mushrooms and cook for 5-6 minutes until deeply golden. Stir occasionally so they brown on multiple sides.
- Add the minced garlic and cook for 1 minute. Stir to prevent scorching.
- Pour in the dry red wine and deglaze the pan, scraping up all browned bits. Simmer for 3 minutes until slightly reduced.
- Add the chicken broth, heavy cream, Dijon mustard, and fresh thyme leaves. Simmer for 5-6 minutes until the sauce thickens and turns dark and glossy with visible thyme flecks.
Finish and serve
- Return the chicken breasts to the pan and spoon the sauce over each piece. Let the chicken warm in the sauce for about 1 minute.
- Garnish with fresh thyme sprigs and serve immediately. Spoon extra sauce around the chicken so it pools in the skillet.
Notes
Pro tip: keep the pan hot when searing so you get a deep golden crust before deglazing—those browned bits create the glossy wine sauce. Store leftovers in an airtight container in the fridge up to 3 days; reheat gently in a skillet until hot, adding a splash of broth if the sauce thickens too much. Freezing is not recommended because the cream may separate after thawing. For a lighter option, replace half the heavy cream with extra chicken broth and simmer 1-2 minutes longer to thicken.
