Ingredients
  

Classic Marinade
  • 0.25 cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried herbs
  • 0.25 salt and pepper Use to taste.
Pork Chops
  • 4 pork chops (1-inch thick)

Method
 

Make the classic marinade
  1. Whisk olive oil, soy sauce, lemon juice, garlic, dried herbs, and salt and pepper in a bowl until smooth.
  2. Add pork chops to the marinade, turning to coat, then marinate for 30 minutes to 4 hours.
Grill the pork chops
  1. Preheat the grill to medium-high heat until ready to cook.
  2. Grill pork chops for 5-6 minutes per side, closing the lid as needed, until the internal temperature reaches 145°F.
Rest and serve
  1. Let the pork chops rest for 5 minutes before serving to keep them juicy.

Notes

For best flavor and even cooking, marinate in a shallow container and turn the chops once halfway through. Refrigerate cooked pork chops up to 3 days; freeze up to 2 months (reheat gently). For a lighter option, swap half the olive oil for olive oil–spray or use low-sodium soy sauce to reduce sodium.
