Blend and freeze
- Blend whole milk, pumpkin puree, cream cheese, brown sugar, pumpkin pie spice, vanilla extract, and salt until completely smooth and no cream cheese lumps remain. Scrape the sides as needed so the texture is fully uniform.
- Pour the mixture into the Ninja Creami pint container and freeze for 24 hours. Let the pint freeze completely before processing so it forms a solid block.
Process and finish
- Process on the Ice Cream setting in the Ninja Creami. If needed, re-spin with 1 tablespoon milk to fix any icy edges, watching for a creamy, scoopable texture.
- Use the Mix-In function to fold in crushed graham crackers. Stop when the crumbs are evenly distributed with no dry pockets.
- Top with whipped cream and cinnamon. Add them right before serving, and look for a visible cinnamon dust across the surface.
Notes
For the smoothest result, make sure the cream cheese is fully softened before blending, then blend until the mixture looks glossy and lump-free. Freeze the pint for up to 2 weeks; for best texture, re-spin and serve within 24 hours of processing. Freezing after mix-in is not recommended for crumb texture. For a dairy-light option, replace cream cheese with lactose-free cream cheese and use lactose-free milk.
