Ingredients

Chicken
  • 4 boneless skinless chicken breasts
  • 0.5 tsp Salt
  • 0.5 tsp pepper
  • 0.5 tsp garlic powder
  • 1 tsp dried thyme
Sear and sauce base
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 shallots, finely minced
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 0.33 cup Irish whiskey (Jameson)
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme leaves
  • 1 Fresh thyme sprigs for garnish

Equipment

  • 1 sheet pan
  • 1 cast iron skillet

Method

Season and sear the chicken
  1. Season chicken breasts with salt, pepper, garlic powder, and dried thyme to taste. Pat to help spices adhere, then set aside while the pan heats.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Sear chicken for 5-6 minutes per side until golden and cooked through to 165°F, then remove to a plate.
Build the whiskey cream sauce
  1. Melt butter in the same pan over medium heat. Cook shallots and mushrooms for 5-6 minutes until golden, stirring occasionally.
  2. Add minced garlic and cook for 1 minute. Stir constantly to prevent browning.
  3. Remove the pan from heat and carefully pour in Irish whiskey. Return to medium heat and let it cook off for 1-2 minutes.
  4. Stir in heavy cream, chicken broth, Dijon mustard, and fresh thyme leaves. Simmer for 5-6 minutes until the sauce thickens to a spoonable consistency.
Finish and serve
  1. Return chicken breasts to the pan. Spoon whiskey cream sauce over each breast to coat.
  2. Garnish with fresh thyme sprigs. Serve hot with extra sauce from the skillet.

Notes

Pro tip: keep the whiskey step on medium heat after pouring and let it reduce briefly so the sauce tastes mellow, not harsh. Refrigerate leftovers in a sealed container for up to 3 days; reheat gently in a skillet over low heat with a splash of broth if needed. Freezing is not recommended because cream-based sauces can separate. For a gluten-free swap, ensure any mustard you use is labeled gluten-free (the recipe itself is naturally gluten-free).
