  • 1 tsp vanilla extract
Zucchini and chocolate
  • 1.5 cups zucchini, grated and squeezed dry

Method
 

Preheat and prep the pan
  1. Preheat the oven to 350°F and line a 12-cup muffin tin with liners.
  2. Whisk whole wheat flour, cocoa powder, baking soda, baking powder, and salt in a large bowl until evenly combined.
Mix wet ingredients and combine
  1. Beat eggs, honey or maple syrup, melted coconut oil, Greek yogurt, and vanilla extract in a separate bowl until smooth.
  2. Stir the wet ingredients into the dry ingredients until just combined; the batter should be thick.
Add zucchini and bake
  1. Fold in grated zucchini and mini chocolate chips so the batter looks speckled with green flecks.
  2. Divide batter evenly among muffin cups, filling each about ¾ full.
  3. Bake at 350°F for 18–20 minutes, until a toothpick inserted in the center comes out with a few moist crumbs and the tops look crackled.
  4. Cool in the pan for 5 minutes, then transfer muffins to a wire rack.
