Egg Roll Soup

Egg roll soup with a savory ginger-soy broth, tender cabbage and carrots, and a quick wonton-strip topping. Built like a stovetop soup version of egg rolls—ground meat browned first for deep flavor, then simmered until the vegetables are just tender.

Ingredients

Ground meat base
  • 1 lb ground pork or chicken
Vegetables
  • 4 cup cabbage, thinly shredded
  • 2 carrots, julienned or shredded
  • 3 clove garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 green onions, sliced
Broth and seasonings
  • 4 cup chicken broth
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp sriracha
  • 2 tbsp vegetable oil
  • 1 Crispy wonton strips
  • 1 sesame seeds
  • 1 extra green onions
  • 1 Salt and pepper to taste

Equipment

  • 1 Dutch oven

Method

Cook the meat
  1. Heat a large pot over medium-high heat and add the vegetable oil. Brown the ground pork, breaking it up as it cooks, then drain excess fat.
  2. Add the minced garlic and grated ginger to the pot. Cook for 1-2 minutes until fragrant.
Build and simmer the soup
  1. Pour in the chicken broth, soy sauce, sesame oil, rice vinegar, and sriracha. Bring the mixture to a boil.
  2. Add the shredded cabbage and carrots. Simmer for 8-10 minutes, until the vegetables are tender.
Finish and serve
  1. Stir in the sliced green onions, then season with salt and pepper to taste. Taste and adjust as needed.
  2. Serve the soup hot, topped with crispy wonton strips, sesame seeds, and extra green onions.

Notes

For the least greasy broth, brown the pork thoroughly and drain excess fat right after cooking. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat gently on the stove. Freeze up to 2 months, but add wonton strips after reheating for best crunch. For a lighter option, use ground chicken and reduce the soy sauce to 2 tablespoons to keep the flavor balanced.
