Ingredients

Frozen dumplings
  • 16 frozen pork or chicken dumplings Use 16–20 depending on your dumpling size; increase to taste.
Ramen noodles
  • 8 oz fresh ramen noodles Cook separately per package instructions and drain well.
Soft-boiled eggs
  • 4 soft-boiled eggs Boil 7 minutes, then peel and halve.
Vegetables and toppings
  • 2 cup bok choy Halve lengthwise so it wilts quickly.
  • 1 cup corn kernels Serve as a sweet, juicy topper.
  • 4 green onions Slice for sprinkling over the bowls.
  • 1 nori sheets Crumble or layer on top.
  • 1 sesame seeds Sprinkle for nutty aroma.
  • 1 chili oil Add to taste at the end.
Broth
  • 4 cup chicken broth Use as the base for the soy-miso broth.
  • 2 tbsp white miso paste Whisk in at a simmer; avoid boiling hard after adding.
  • 2 tbsp soy sauce Season the broth and deepen umami.
  • 1 tbsp sesame oil Stir in for a toasted aroma.
  • 1 tbsp mirin Adds gentle sweetness and balance.
  • 1 salt Add to taste after whisking seasonings.

Equipment

  • 1 Dutch oven
  • 1 sheet pan

Method

Make the soy-miso broth
  1. Bring chicken broth to a simmer in a Dutch oven over medium heat. Whisk in white miso paste, soy sauce, mirin, and sesame oil until smooth.
Cook the dumplings and bok choy
  1. Add frozen pork or chicken dumplings to the simmering broth. Cook 5-7 minutes until cooked through, stirring gently once or twice to keep them from sticking.
  2. Add bok choy halves to the pot. Cook 2-3 minutes until wilted and bright green.
Cook ramen noodles separately
  1. Cook fresh ramen noodles separately according to package instructions. Drain the noodles well so they don’t dilute the broth.
Assemble the bowls
  1. Divide cooked ramen noodles between 4 bowls. Ladle broth and dumplings over the noodles.
  2. Top each bowl with halved soft-boiled eggs, corn kernels, sliced green onions, nori sheets, sesame seeds, and chili oil. Taste and add salt if needed.

Notes

For the best texture, keep the broth at a gentle simmer once the miso is whisked in—avoid a hard boil so it stays silky. Store leftover broth, dumplings, and toppings separately in the fridge up to 3 days; reheat gently and add fresh toppings after reheating. Freezing isn’t recommended for the assembled bowl, but you can freeze leftover broth (without noodles) for up to 2 months. If you want a lighter option, swap in low-sodium broth and reduce the soy sauce to taste.
