Ingredients

Chicken
  • 4 boneless skinless chicken breasts Use evenly thick breasts for even searing.
Seasonings
  • 0.25 tsp Salt To taste.
  • 0.25 tsp pepper To taste; freshly cracked preferred.
  • 0.25 tsp garlic powder To taste.
Sautéing & Sauce Base
  • 2 tbsp olive oil
  • 3 garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 packet (1 oz) ranch seasoning mix
  • 4 oz cream cheese, cubed
  • 1 tsp dried dill
  • 0.25 fresh chives for garnish Chop lightly and sprinkle just before serving.

Equipment

  • 1 cast iron skillet

Method

Season & sear the chicken
  1. Season the chicken breasts with salt, pepper, and garlic powder to taste. Heat olive oil in a large skillet over medium-high heat, then sear chicken for 5-6 minutes per side until golden and the internal temperature reaches 165°F; remove to a plate.
Build the ranch cream sauce
  1. Add minced garlic to the same pan and cook for 30 seconds. Pour in chicken broth and deglaze, scraping up browned bits from the bottom.
  2. Stir in heavy cream and ranch seasoning, then bring the mixture to a simmer over medium heat.
  3. Add cubed cream cheese and stir over medium-low heat until completely melted and the sauce is smooth.
  4. Stir in dried dill, then return the chicken to the pan and spoon sauce over each breast. Simmer for 3 minutes.
Serve
  1. Garnish with fresh chives and serve over mashed potatoes or pasta.

Notes

Pro tip: keep the sauce at a gentle simmer while melting the cream cheese—this prevents graininess and helps the sauce stay thick and glossy. Refrigerate leftovers in an airtight container for up to 3 days; reheat gently until warmed through. Freezing is not recommended due to the cream sauce texture. For a lighter option, use reduced-fat cream cheese and half-and-half in place of heavy cream (sauce may be slightly thinner).
