Equipment

  • 1 large pot
  • 1 immersion blender

Method

Roast garnish
  1. Toss the reserved cauliflower florets with 2 tablespoons olive oil, then spread in a single layer on a sheet pan. Roast at 425°F for 20–25 minutes until golden and caramelized, then set aside for garnish.
Cook the soup
  1. Melt the butter in a large pot over medium heat. Sauté the diced onion for 5 minutes until softened, then add the minced garlic and cook for 1 minute.
  2. Add the remaining cauliflower florets and the broth to the pot. Bring to a boil, then reduce to a simmer and cook for 20 minutes until very tender.
Blend and finish
  1. Blend the soup completely smooth with an immersion blender. Stir in the heavy cream, nutmeg, and white pepper and warm through until fully combined.
  2. Season with salt to taste. Serve topped with the roasted, crispy cauliflower, a truffle oil drizzle, and chives.

Notes

For the creamiest texture, blend the soup while it’s hot and stop only when no small cauliflower bits remain. Store covered in the refrigerator up to 4 days; reheat gently on the stove, adding a splash of broth if it thickens. This freezes well for up to 2 months—thaw overnight and reheat slowly, stirring to restore smoothness. For a dairy-free swap, use full-fat coconut cream in place of heavy cream (use white pepper as written for warmth).
