Method
 

Blend the pineapple soft serve
  1. Add full-fat cottage cheese, frozen pineapple chunks, honey or agave, lemon juice, vanilla extract, and salt to a high-powered blender.
  2. Blend until completely smooth, using short bursts to start and then steady blending.
  3. Blend for at least 2 minutes until the texture is silky with no cottage cheese lumps, scraping down the sides once if needed.
  4. Taste and adjust sweetness by blending again briefly if you add more honey or agave.
Pipe and serve
  1. Transfer the mixture to a piping bag with a star tip and pipe into cups for a Dole Whip swirl.
  2. Serve immediately for the thickest soft-serve texture and the brightest tropical flavor.

Notes

Pro tip: for the silkiest texture, use frozen pineapple chunks straight from the freezer and blend until absolutely lump-free. Best eaten right away; if needed, refrigerate up to 24 hours (it will firm slightly). Freezing is not recommended because it can become grainy after thawing. For a dairy-light option, use low-fat cottage cheese, but the texture may be less soft-serve creamy.
