Blackstone cowboy stir fry
  • 1.5 lb sirloin steak
  • 2 bell peppers
  • 1 onion
  • 2 cup corn kernels
  • 3 tbsp oil
  • 0.25 cup soy sauce
  • 2 tbsp BBQ sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 4 garlic
  • 0.25 tsp salt to taste
  • 0.25 tsp pepper to taste
  • 1 green onions for garnish

Method
 

Griddle prep and sear the steak
  1. Heat the Blackstone griddle to high heat and add the oil, letting it shimmer at the surface (about 1 minute).
  2. Season the steak with salt and pepper and cook for 3-4 minutes until seared, then set aside.
Cook vegetables
  1. Add the bell peppers and onions to the griddle and cook for 5-6 minutes until softened, scraping up any browned bits.
  2. Add the corn and garlic and cook for 2 minutes, stirring until fragrant and hot.
Sauce and finish
  1. Combine the soy sauce, BBQ sauce, Worcestershire sauce, and brown sugar, then pour over the vegetables.
  2. Return the steak to the griddle, toss everything together for 2-3 minutes until coated and sizzling, then garnish with green onions.

Notes

For best browning, slice steak thin and keep the griddle hot before adding each batch. Store leftovers in an airtight container in the fridge for up to 3 days; reheat in a skillet or on the griddle. Freezing isn’t recommended because the peppers and corn can soften too much. For a lower-sugar option, use reduced-sugar BBQ sauce or cut the brown sugar to 1 tablespoon.
