Apple Fritters

Apple fritters with diced apples and a quick vanilla glaze, fried until deeply golden and crisp on the outside. Thick batter makes irregular, tender fritter centers that hold caramelized apple pieces in every bite.

Ingredients

Dry ingredients
  • 2 cup all-purpose flour
  • 0.25 cup granulated sugar
  • 2.5 tsp baking powder
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp salt
Wet ingredients
  • 2 eggs
  • 0.75 cup whole milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
Apples
  • 2 cup apples, peeled and finely diced
Frying
  • 1 Vegetable oil for frying
Vanilla glaze
  • 1.5 cup powdered sugar
  • 3 tbsp milk
  • 1 tsp vanilla

Equipment

  • 1 cast iron skillet
  • 1 sheet pan

Method

Mix the batter
  1. Whisk all-purpose flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt together in a bowl.
  2. Whisk eggs, whole milk, melted butter, and vanilla extract, then fold into the dry ingredients until just combined.
  3. Fold in apples, peeled and finely diced; the batter will be thick.
Fry and glaze
  1. Heat vegetable oil in a cast iron skillet to 375F and keep it steady for frying.
  2. Drop 1/4 cup portions of batter into the oil and fry for 2-3 minutes per side, until deeply golden.
  3. Drain the fritters on paper towels (or a rack over a sheet pan).
  4. Whisk powdered sugar with milk and vanilla, then drizzle generously over the still-warm fritters.

Notes

Pro tip: keep the oil at 375F for consistent browning—if it drops too much after adding batter, the fritters can turn greasy. Store in an airtight container in the refrigerator up to 3 days; rewarm in a 350F oven for 5-8 minutes. Freezing is yes—freeze unglazed or after glaze sets, then re-crisp in the oven. For a lightly spiced swap, use all cinnamon and skip nutmeg if you prefer a simpler flavor profile.
