Ingredients

Chicken and broth base
  • 1.5 lb chicken breast
  • 4 carrots sliced
  • 3 celery sliced
  • 1 onion diced
  • 6 cloves garlic minced
  • 2 tbsp fresh ginger grated
  • 8 cup chicken bone broth
  • 2 tsp turmeric
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 0.25 tsp cinnamon
  • 0.25 tsp cayenne
  • 1 tsp salt to taste
Finishers and noodles
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 8 oz egg noodles or rice noodles either one
Serving
  • 1 fresh parsley for serving
  • 1 lemon wedges for serving

Equipment

  • 1 Dutch oven

Method

Simmer the soup base
  1. Add chicken breast, chicken bone broth, carrots, celery, onion, garlic, ginger, turmeric, black pepper, thyme, cinnamon, and cayenne to a Dutch oven and bring to a gentle simmer. Simmer for 20-25 minutes, keeping the liquid at a steady simmer so the chicken stays tender and aromatic with a vivid turmeric color.
Shred and return chicken
  1. Remove the chicken from the pot, cool slightly, and shred it into bite-size pieces, then return the shredded chicken to the soup. Stir until the chicken is evenly distributed and the broth looks consistently golden-yellow.
Cook noodles
  1. Add egg noodles or rice noodles to the pot and simmer for 6-8 minutes, stirring occasionally. Cook until the noodles are tender but not mushy, then the soup should look thicker and more spoon-coating.
Finish and season
  1. Stir in lemon juice, honey, and apple cider vinegar and simmer for 1 minute to meld the flavors. The surface should smell bright and taste balanced, with a noticeable lemon lift against the warm spices.
Serve
  1. Season with salt to taste, then ladle into bowls and top with fresh parsley and lemon wedges. Serve while hot with extra lemon for bright, peppery finish.

Notes

For best texture, keep the soup at a gentle simmer during the first cook so the chicken doesn’t toughen. Refrigerate leftovers in an airtight container up to 3 days; reheat on the stove until steaming (add a splash of broth or water if it thickens). Freezing is not recommended if you use egg or rice noodles, since they can soften too much—freeze broth only if desired. For a dairy-free and gluten-aware swap, use rice noodles and check that any noodles labeled gluten-free meet your needs.
