Method
Sauté the base
- Heat the olive oil in a large pot over medium heat, then sauté the onion and carrots for 5 minutes until softened and glossy.
Build the herb broth
- Add the garlic, Italian seasoning, and dried basil, and cook for 1 minute until fragrant, stirring constantly so the garlic doesn’t brown.
- Add the chicken broth and bring the mixture to a boil, keeping a steady simmering bubble in the center of the pot.
Cook tortellini and finish
- Add the refrigerated cheese tortellini and cook for 4-5 minutes until just tender, watching for the edges to puff and soften.
- Stir in the shredded chicken and baby spinach, then cook for 2-3 minutes until the chicken is heated through and the spinach wilts.
- Season with salt and pepper to taste, then serve hot with generous Parmesan and fresh basil on top.
Notes
For best texture, keep the soup at a gentle boil while cooking the tortellini so it stays tender but doesn’t split. Store leftovers covered in the refrigerator up to 3 days; reheat on the stove until steaming. Freezing isn’t recommended because tortellini can turn soft and grainy after thawing. If you need a lower-carb option, use spinach tortellini or substitute small diced cooked chicken and add extra spinach for bulk.
