Ingredients

carrots
  • 2 lb carrots
seasoning and coating
  • 3 tbsp olive oil
  • 1 packet (1 ounce) ranch seasoning
  • 1 tsp grated Parmesan Use grated Parmesan for finishing.
  • 1 tbsp fresh dill or parsley, chopped

Equipment

  • 1 sheet pan

Method

Prep the oven
  1. Preheat the oven to 425F and line a sheet pan with parchment for easy cleanup (use a visual cue of parchment covering the pan).
Coat the carrots
  1. Toss the carrots with olive oil and ranch seasoning until evenly coated and glossy.
  2. Spread the coated carrots in a single layer with space between sticks so they roast instead of steam.
Roast
  1. Roast for 20-25 minutes, tossing halfway, until tender and browned at the edges (watch for caramelized spots).
Finish and serve
  1. Sprinkle the roasted carrots with grated Parmesan and the chopped fresh dill or parsley while warm so it melts and clings.
  2. Serve warm as a side, with the pan-finished herbs visible on top.

Notes

For the best browning, keep the carrots spaced on the sheet pan and use a hot oven at 425F; crowding can lead to softer, less browned edges. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat on a sheet pan at 425F until warmed through. This does not need freezing. For a dairy-light option, use a dairy-free Parmesan-style topping instead of grated Parmesan.
