Equipment

  • 1 Dutch oven

Method

Sauté aromatics
  1. Heat 2 tablespoons olive oil in a large pot over medium heat, then sauté the onion and carrots for 5 minutes, stirring until softened.
  2. Add the garlic, cumin, turmeric, coriander, paprika, and cayenne and cook for 2 minutes, stirring constantly until very fragrant.
Simmer lentils
  1. Add the rinsed red lentils and vegetable broth, then bring to a boil over high heat.
  2. Reduce heat to low and simmer for 25-30 minutes, stirring occasionally, until the lentils have completely dissolved.
Blend and finish
  1. Blend the soup with an immersion blender until smooth and silky.
  2. Stir in the fresh lemon juice and lemon zest, then season with salt and pepper to taste.
Make crispy shallots and serve
  1. Fry the thinly sliced shallots in olive oil until crispy and golden, then drain briefly on paper towels if needed.
  2. Serve the soup topped with crispy shallots, fresh parsley, and a drizzle of olive oil.

Notes

For the silkiest texture, blend while the soup is still hot and keep a gentle pace so it emulsifies rather than turns grainy. Store leftovers in the refrigerator up to 4 days; reheat gently, adding a splash of broth or water if it thickens. Freezing is not recommended because the blended lentils can change texture after thawing. For a dairy-free option (naturally dairy-free here), use extra-virgin olive oil for serving and keep the salt to taste.
