Sauté the aromatics
- Melt the butter in a large pot over medium heat, then sauté the diced onion for 4 minutes until softened and lightly translucent.
- Add the minced garlic and Italian seasoning and cook for 2 minutes, stirring, until fragrant and not browned.
Simmer and build the soup
- Add the chicken broth and bring to a simmer, then stir in the heavy cream until smooth and combined.
- Add the potato gnocchi and cook for 3-4 minutes until the gnocchi float and are cooked through.
Finish with chicken, greens, and cheese
- Add the shredded chicken and baby spinach and cook for 2 minutes, stirring, until the spinach wilts.
- Stir in the parmesan and nutmeg, then season with salt and pepper to taste until the broth tastes balanced.
Serve
- Ladle the soup into bowls and top with extra parmesan and fresh basil for serving.
Notes
For best texture, avoid boiling hard after adding the cream—keep the soup at a gentle simmer so the gnocchi stays tender. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently, adding a splash of broth if it thickens. Freeze is not recommended because cream-based gnocchi soup can break after thawing. Swap option: use half-and-half instead of heavy cream for a lighter result.
